Notes

  • Customize Your Toppings: While pepperoni is a classic choice, feel free to get creative with your toppings! You can add veggies like bell peppers, mushrooms, or onions for even more flavor. For a vegetarian option, try swapping out the pepperoni for olives or fresh basil leaves.
  • Make it Crispy: If you prefer a crispier bite, try slicing your zucchini a little thinner or roasting the zucchini coins for 5 minutes before adding the toppings. This extra step will help remove any moisture and give you a crispier base.
  • Storage Tip: These Zucchini Pizza Bites are best enjoyed fresh, but if you have leftovers, store them in an airtight container in the fridge for up to 2-3 days. To reheat, simply pop them back in the oven for a few minutes until the cheese is bubbly again!
