You will need the following items to make this recipe:

Measuring cups and spoons, cheese/vegetable grater, large bowl, silicone spoon, baking sheet, small bowl or glass

Ingredients:

  • 1 cup zucchini, grated
  • 1 large egg
  • ¼ cup sharp cheddar cheese, finely shredded
  • ⅓ cup italian breadcrumbs
  • 1 tbsp grated parmesan
  • 1 tsp minced onion
  • salt and black pepper to taste

Directions:

  1. Preheat the oven to 400°F.  Spray a baking sheet with cooking spray.
  2. Grate the zucchini, then ring out the excess water using a clean towel or layers of paper towel.
  3. Combine all of the ingredients into a medium bowl, until well mixed.
  4. Use a tablespoon to scoop the mixture, then place on the baking sheet. Gently smash the zucchini scoops with the bottom of a glass or small bowl. 
  5. Transfer the baking sheet to the oven, and bake for 18 minutes, flipping the tots over halfway through baking. You’ll know they’re done when they’re golden brown.

Notes

Water Content in Zucchini: Zucchini has a high water content, so it’s crucial to squeeze out as much liquid as possible after grating. If you skip this step, the tots may turn out soggy instead of crispy.

Storage: These tots are best enjoyed fresh out of the oven, but if you have leftovers, store them in an airtight container in the fridge for up to 2 days. You can reheat them in the oven to bring back their crispy texture.
